Join us for an evening with Robby Dow @thevodkaartist, owner and beverage director of @bespoke.nc, the groundbreaking all-day Italian-inspired aperitivo bar in downtown Wilmington, NC – and one of the most exciting bar talents in the country right now.

Robby will be behind our bar all of Sunday from 5-11pm with an exclusive Bespoke menu. No reservations needed – just come right on in.

A 2026 @imbibe 75 honoree (and the only North Carolina bar professional on the prestigious global list), Robby has built something genuinely singular in coastal NC, just a few hours from his hometowns of Durham and Hillsborough.

An NC State grad, Robby tried out finance, but quickly traded that life for one behind the bar at Chapel Hill’s legendary @thecrunkleton, then continued honing his craft at Brooklyn’s acclaimed @grandarmybar. He returned to NC in 2022, working with beloved local institutions including @dramanddraught, Dean Neff’s @seabirdnc, and @olivero_ilm, helping launch the celebrated beverage program alongside Sunny Gerhart and Lauren Krall Ivey.

When the opportunity came to purchase Bespoke in 2024, Robby transformed the beloved downtown Wilmington coffee shop into something the state had never quite seen: high-brow and low-brow, serious craft worn lightly, and a bar that feels as welcoming as it is thoughtful.

We’re thrilled to welcome Robby behind our bar. He’ll be serving a cocktail menu inspired by Bespoke – pure expertise without the weight, rooted in Italian aperitivo and the ingredients and ideas that have made his bar so special.

No reservations or tickets needed, just take the stairs to our little basement bar and come on in.
